Originellement, la pizza \u00e9tait un en-cas pris\u00e9 par les ouvriers pour son faible prix. C\u2019\u00e9tait de la vraie bouffe de rue, vendue par des marchands ambulants. Alexandre Dumas en parle dans un de ses romans&nbsp;: pour deux sous seulement, \u00e9crit-il, elle doit permettre \u00e0 toute une famille de se nourrir.<\/p>\n\n\n\n<p>La mani\u00e8re de faire la pizza est cruciale. La pizza romaine est assez large, fine, plate et croustillante. Mais celle qui a conquis le monde, c\u2019est bien la pizza napolitaine, qui se caract\u00e9rise par sa p\u00e2te moelleuse, aux bords gonfl\u00e9s et cuite dans un four \u00e0 bois pour m\u00e9riter son appellation de <em>pizza napoletana<\/em>.<\/p>\n\n\n\n<p>\u00c9videmment, il s\u2019agit d\u2019un plat \u00e0 d\u00e9nomination d\u2019origine contr\u00f4l\u00e9e. C\u2019est s\u00e9rieux, tout \u00e7a. Les pizzas napolitaines traditionnelles sont en r\u00e9alit\u00e9 seulement au nombre de deux&nbsp;: la <em>marinara<\/em>, couverte d\u2019ail, d\u2019origan, de tomate et d\u2019huile d\u2019olive, et la <em>margherita<\/em>, dont la recette comprend \u00e9galement de l\u2019ail et de l\u2019huile d\u2019olive, mais accompagn\u00e9s de mozzarella et de basilic.<\/p>\n\n\n\n<p>Deux endroits incontournables pour d\u00e9guster une v\u00e9ritable pizza napolitaine&nbsp;:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><a href=\"https:\/\/www.sorbillo.it\/\" target=\"_blank\" rel=\"noreferrer noopener\"><em>Sorbillo<\/em><\/a>, une enseigne qui a pignon sur rue depuis plus de 80 ans (Via dei Tribunali, 38), c\u2019est aujourd\u2019hui une cha\u00eene qui a quelques succursales<\/li>\n\n\n\n<li><a href=\"https:\/\/maps.app.goo.gl\/ZgH2dE6wXuXgt8z67\" target=\"_blank\" rel=\"noreferrer noopener\"><em>Brandi<\/em><\/a>, sur la c\u00e9l\u00e8bre place Salita Sant&#8217;Anna di Palazzo, au num\u00e9ro 1-2<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-le-ragu-pas-nbsp-ragout-nbsp-nbsp-ragu-nbsp-nbsp\">Le rag\u00f9 (pas \u00ab&nbsp;rago\u00fbt&nbsp;\u00bb, \u00ab&nbsp;rag\u00f9&nbsp;\u00bb&nbsp;!)<\/h2>\n\n\n\n<p>Le <em>rag\u00f9<\/em> est en r\u00e9alit\u00e9 l\u2019appellation commune des sauces italiennes chaudes \u00e0 base de viande et de tomates qui accompagnent les p\u00e2tes. Les deux plus c\u00e9l\u00e8bres sont le <em>rag\u00f9 bolognese<\/em> et le <em>rag\u00f9 napoletano<\/em>. La premi\u00e8re est typique du nord du pays, o\u00f9 le <em>rag\u00f9<\/em> contient du vin blanc, de la viande hach\u00e9e ou \u00e9minc\u00e9e et ne comporte d\u2019autres l\u00e9gumes (ou fruits, disons-le) que la tomate. De son c\u00f4t\u00e9, le <em>rag\u00f9 <\/em>du Sud est une sauce brais\u00e9e dans du vin rouge. Elle contient de gros morceaux de viande de b\u0153uf et\/ou de porc (parfois m\u00eame des saucisses) cuits \u00e0 la casserole, accompagn\u00e9s, dans le cas du <em>rag\u00f9 napoletano<\/em>, de sauce tomate, bien s\u00fbr, mais aussi d\u2019un <em>soffrito<\/em>, c\u2019est-\u00e0-dire quelques l\u00e9gumes et du persil finement hach\u00e9s et revenus dans du beurre.<\/p>\n\n\n\n<p>Le <em>rag\u00f9<\/em> n\u2019\u00e9tait autrefois servi que le dimanche et les jours de f\u00eate. (Via Paladino Giovanni, 51)<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-la-mozzarella-di-bufala\">La mozzarella <em>di bufala<\/em><\/h2>\n\n\n\n<p>La mozzarella est le fromage iconique de la Campanie, la province de Naples. Il s\u2019agit d\u2019un v\u00e9ritable tr\u00e9sor aux yeux des Napolitains, qui la surnomment \u00ab&nbsp;la perle de la table&nbsp;\u00bb.<\/p>\n\n\n\n<p>La mozzarella que nous mangeons habituellement est fabriqu\u00e9e \u00e0 partir de lait de vache, mais la v\u00e9ritable mozzarella est compos\u00e9e \u00e0 partir du lait de buffle et poss\u00e8de une saveur tr\u00e8s caract\u00e9ristique, qui rappelle la noisette. Notons qu\u2019\u00e0 Naples, il est possible de commander une pizza faite avec ce fromage de buffle. Demandez-le simplement au moment de commander&nbsp;!<\/p>\n\n\n\n<p><em>La Bufala <\/em>est une cha\u00eene de restaurants qui a fait de la <em>mozzarella di bufala<\/em> son produit phare et a essaim\u00e9 partout dans le monde, mais, dans celle que vous trouverez \u00e0 Naples, Piazza Garibaldi, 34, vous trouverez un accueil chaleureux et une ambiance typique autour de pizzas g\u00e9n\u00e9reuses et authentiques.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-les-spaghetti-alle-vongole\">Les spaghetti <em>alle vongole<\/em><\/h2>\n\n\n\n<p>Les <em>spaghetti alle vongole <\/em>repr\u00e9sentent parfaitement la magnifique combinaison des richesses terrestres de la Campanie (le bl\u00e9 dont on fait les spaghettis) et maritimes de Naples<em>. <\/em>Il s\u2019agit d\u2019un plat de p\u00e2tes aux fruits de mer de toutes sortes, et en particulier des palourdes. Il existe deux versions traditionnelles de cette recette, avec ou sans sauce tomate. Elles sont alors appel\u00e9es \u00ab&nbsp;rouge&nbsp;\u00bb ou \u00ab&nbsp;blanche&nbsp;\u00bb.<\/p>\n\n\n\n<p>Le <a href=\"https:\/\/www.facebook.com\/osteria.ilgobbetto\" target=\"_blank\" rel=\"noopener\"><em>Rist<\/em><\/a><em><a href=\"https:\/\/maps.app.goo.gl\/orMAjyLwAXfCBKJR9\" target=\"_blank\" rel=\"noreferrer noopener\">orante Il Gobbetto<\/a><\/em>, renomm\u00e9 pour ses plats de poissons et ses serveurs v\u00eatus de costumes traditionnels, en propose une version d\u00e9licieuse. (8, Via Sergente Maggiore)<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-le-risotto-alla-pescatore\">Le risotto <em>alla pescatore<\/em><\/h2>\n\n\n\n<p>Les p\u00e2tes ne sont pas la seule c\u00e9r\u00e9ale typique de la Campanie et de la r\u00e9gion napolitaine. On trouve aussi sur ces grandes terres humides des rizi\u00e8res. Le <em>risotto <\/em>est donc une pr\u00e9paration de riz cuite dans un bouillon. Sa version <em>alla pescatore<\/em> fait, comme son nom l\u2019indique, la part belle aux produits de la mer, en particulier les crevettes, mais aussi le poulpe, le calmar et bien d\u2019autres crustac\u00e9s.<\/p>\n\n\n\n<p>Une version particuli\u00e8rement app\u00e9tissante en est servie \u00e0 <em>La Taverna Del Buongustaio<\/em>, Via Basilio Puoti 8.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-la-friture-de-petits-poissons\">La friture de petits poissons<\/h2>\n\n\n\n<p>Ici, on parle d\u2019un c\u00f4ne de papier rempli de petites fritures chaudes. Il s\u2019agit d\u2019un des plats typiques de <em>street food<\/em> de Naples, vendu dans plusieurs kiosques dans les rues de la cit\u00e9. On peut y d\u00e9guster calmars, poissons, poulpe ou langoustines (les fameux <em>scampis<\/em>), pass\u00e9s dans la chapelure et frits dans l\u2019huile. Un d\u00e9lice simple et savoureux&nbsp;!<\/p>\n\n\n\n<p>Habituellement, ces kiosques sugg\u00e8rent aussi des l\u00e9gumes, mais aussi d\u2019autres plats super-typiques de Naples, tels les <em>crocche<\/em> (une croquette de pomme de terre frite et aplatie), la <em>frittatina, <\/em>une boule de macaronis \u00e0 la b\u00e9chamel frite ou les<em> arancini<\/em>, riche boule de riz frite au c\u0153ur de l\u00e9gumes et de viande.<\/p>\n\n\n\n<p>Une adresse incontournable pour d\u00e9guster la meilleure friture de poisson napolitaine&nbsp;: <a href=\"https:\/\/maps.app.goo.gl\/KyWrvUovduzfJZJb8\" target=\"_blank\" rel=\"noreferrer noopener\">Il Cuoppo Friggitori Napoletani<\/a>, Via San Biagio Dei Librai 23, une minuscule \u00e9choppe aux fritures exceptionnelles et aux prix d\u00e9fiant toute concurrence.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-sfogliatella\"><em>Sfogliatella<\/em><\/h2>\n\n\n\n<p>Il s\u2019agit d\u2019un dessert particuli\u00e8rement pris\u00e9. C\u2019est la reine des sucreries servies aux tables napolitaines&nbsp;! La <em>sfogliatella<\/em> a \u00e9t\u00e9 invent\u00e9e au d\u00e9but du 19<sup>e<\/sup> si\u00e8cle par un p\u00e2tissier napolitain.
